
Grass-Fed Beef, Root Vegetable & Thyme Stew

Ingredients
- 400g grass-fed beef chuck, cubed
- 2 carrots, chopped
- 1 parsnip, chopped
- 1 celery stick, sliced
- 1 small leek, sliced
- 2 tbsp tomato purée
- 500ml filtered beef stock or bone broth
- 1 tbsp avocado oil or ghee
- 2 sprigs fresh thyme
- Salt & pepper
Method
- Heat oil in a pan and brown beef lightly for flavour.
- Transfer to slow cooker with vegetables, seasoning and thyme.
- Stir in tomato purée and stock.
- Cook on low for 6–8 hours.
- Serve.
