Grass-Fed Beef, Root Vegetable & Thyme Stew

Ingredients

  • 400g grass-fed beef chuck, cubed
  • 2 carrots, chopped 
  • 1 parsnip, chopped 
  • 1 celery stick, sliced
  • 1 small leek, sliced 
  • 2 tbsp tomato purée
  • 500ml filtered beef stock or bone broth
  • 1 tbsp avocado oil or ghee
  • 2 sprigs fresh thyme
  • Salt & pepper

Method

  • Heat oil in a pan and brown beef lightly for flavour.
  • Transfer to slow cooker with vegetables, seasoning and thyme.
  • Stir in tomato purée and stock.
  • Cook on low for 6–8 hours.
  • Serve.
