Lemon, Herb & Garlic Free-Range Chicken

Ingredients

  • 1 small organic free-range chicken
  • 1 lemon, sliced
  • 4 carrots, chopped
  • 1 fennel bulb, sliced
  • 400ml filtered chicken stock
  • 1 tbsp oil or ghee
  • Fresh rosemary and thyme

Method

  • Rub chicken with oil and herbs.
  • Place vegetables in slow cooker and set chicken on top.
  • Add lemon and stock.
  • Cook on low for 6–7 hours.
  • Rest 10 minutes before carving.
