
Wild Garlic, Carrot & Lentil Warm Salad
"Wild garlic is one of my favourite ingredients. The season is fleeting, which makes it feel rare and precious, and if you forage it yourself there's a warm glow of accomplishment when you eat it. This salad nourishes hormones through an abundance of fibre and a drizzle of good olive oil, while the wild garlic supports hormone detoxification. It's also warming and moreish. Eat it beyond the season by substituting slow-roasted garlic," says nutritional therapist Alexa Mullane.

Ingredients
- 200g carrots, roasted and sliced
- 150g cooked lentils
- 25g wild garlic, finely sliced
- 2 tbsp olive oil
- 1 tsp apple cider vinegar
- 1 tsp honey
- Salt & pepper
Method
- Roast carrots at 200°C for 25 minutes until tender.
- Whisk olive oil, vinegar and honey.
- Toss warm carrots with lentils and wild garlic.
- Drizzle dressing and serve warm.
