
Rhubarb, Fennel & Herb Salad With Honey Dressing

Ingredients
- 200g rhubarb, thinly sliced
- 1 small fennel bulb, shaved
- 2 tbsp olive oil
- 1 tsp honey
- 1 tsp apple cider vinegar
- 2 tbsp fresh herbs (mint, dill or parsley)
- 30g toasted almonds
Method
- Place rhubarb in a bowl and pour over just-boiled water for 30 seconds, then drain (this softens the sharpness).
- Whisk olive oil, honey and vinegar together in a jug.
- Toss rhubarb with fennel and herbs.
- Plate, drizzle dressing and scatter almonds.
