Raw Carrot Cake Bites With Cashew Cream

Ingredients

For the bites:

  • 100g ground almonds
  • 100g finely grated carrot
  • 120g Medjool dates (pitted)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 15g coconut oil (melted)

For the cashew cream:

  • 75g cashews (soaked 2–4 hours)
  • 15g maple syrup
  • 20–30ml milk of choice

Method

  • Add dates to a food processor and blend into a sticky paste.
  • Add almonds, carrot, spices and coconut oil, then pulse until combined.
  • Roll the mixture into small egg shapes using your hands.
  • Blend soaked cashews, maple syrup and milk until smooth.
  • Chill bites for 15 minutes, then drizzle or sandwich with cashew cream.
