Slow-Cooked Organic Pork Shoulder With Carrot & Apple
"Warming and deeply satisfying, this dish supports digestion, immunity and overall health. The gut-friendly benefits are abundant — slow-cooked meat is easier to digest and provides collagen, which is healing for the gut, while apple cider vinegar stimulates digestive juices and the cooked apple provides pectin, a gentle fibre that feeds the microbiome. Ask your butcher for pork shoulder on the bone for maximum nutrients and collagen," says nutritional therapist Alexa Mullane.
