Mediterranean Chickpea & Feta Salad

"A fresh and vibrant salad, the chickpeas, feta and colourful vegetables provide a steady release of energy from nourishing protein and gut-loving fibre. Ingredients

  • 1 tin chickpeas, drained and rinsed

  • 100g cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ½ cucumber, chopped

  • 60g feta cheese, crumbled

  • 1 tbsp extra virgin olive oil

  • Juice of 1 lemon

  • 1 tbsp fresh parsley, chopped

  • Salt and freshly ground black pepper, to taste

Method

  1. In a large bowl, toss together the chickpeas, cherry tomatoes, cucumber, red onion and parsley.

  2. Drizzle with lemon juice and olive oil, then season generously with sea salt and freshly ground black pepper.

  3. Just before serving, scatter over the crumbled feta cheese.
