Green Detox Broccoli Soup

"This vibrant green soup provides a cleansing and balancing meal with multiple health benefits. Garlic, leek, onion, broccoli and spinach offer essential nutrients like sulphur to support liver detoxification. The indole-3-carbinol in broccoli also helps balance hormones by supporting the detoxification of oestrogen. Fibre from the vegetables encourages healthy elimination of toxins, and the comforting mix of vitamins, minerals and healthy fats supports digestion and restores energy. Ingredients

  • 1 tbsp olive oil

  • 1 leek or ½ onion, chopped

  • 2 garlic cloves, smashed

  • 1 small head broccoli (approx. 250g), chopped

  • 1 courgette (zucchini), chopped

  • 2 handfuls spinach

  • 1 tbsp fresh lemon juice

  • 720ml (3 cups) vegetable broth or filtered water

  • 1 tbsp hemp seeds (for blending)

  • Salt and black pepper, to taste

Method

  1. In a medium pot, heat olive oil over medium heat. Sauté leek and garlic until soft and fragrant (about 3–4 minutes).

  2. Add broccoli, courgette, and broth. Bring to a simmer and cook for 10–12 minutes, until vegetables are tender.

  3. Add spinach, lemon juice, and hemp seeds. Blend using a stick blender or in a high-speed blender until creamy.

  4. Season to taste. Serve warm with an extra sprinkle of hemp seeds or a swirl of olive oil.
