Tuna & White Bean Salad with Lemon & Parsley

This light yet filling salad made with Mediterranean ingredients is packed with nourishing and energising ingredients. Tuna is high in protein for steady energy while supporting muscle, hormone and immune health. Ingredients

  • 1 can (150g) tuna in olive oil, drained

  • 1 can (400g) white beans, drained and rinsed

  • Juice of 1 lemon

  • 2 tbsp extra virgin olive oil

  • 1 garlic clove, minced

  • Fresh parsley, chopped

  • Salt & pepper

Method

  1. Mix tuna, beans, garlic, parsley, lemon juice and olive oil.

  2. Season and toss gently.

  3. Serve with mixed greens or rye crackers.
