Soft Ginger Molasses Cookies

Ingredients

  • 180g almond flour
  • 2 tbsp coconut flour (16g)
  • ½ tsp baking soda
  • 1½ tsp ground ginger
  • 1 tsp cinnamon
  • ⅛ tsp nutmeg
  • Pinch sea salt
  • 1 egg
  • 60ml maple syrup
  • 2 tbsp blackstrap molasses
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract

Method

  • Preheat oven to 170°C (fan). Line a baking tray with parchment.
  • Mix almond flour, coconut flour, baking soda, spices and salt.
  • In another bowl, whisk egg, maple syrup, molasses, coconut oil and vanilla.
  • Combine wet and dry ingredients until a soft dough forms.
  • Scoop into 10–12 balls, flatten slightly.
  • Bake 10–12 minutes until edges are golden.
  • Cool fully for the texture to set.
