Rosemary & Garlic Grass-Fed Steak With Rocket & Walnut Salsa

Ingredients

  • 2 x 150–180g organic, grass-fed sirloin or ribeye steaks

  • 2 garlic cloves, minced

  • 1 tbsp fresh rosemary, finely chopped

  • 2 large handfuls rocket

  • 2 tbsp walnuts, roughly chopped

  • 1 tbsp extra virgin olive oil

  • Juice of ½ lemon
  • Salt & black pepper

Method

  1. Rub steaks with garlic, rosemary, sea salt and black pepper. Leave at room temperature for around 20 minutes.
  2. Heat a skillet or griddle pan until very hot. Sear steaks for 2–3 minutes on each side (or to your preferred doneness).
  3. While steaks rest, toss rocket, walnuts, olive oil and lemon juice together to make the salsa.
  4. Rest steaks for 5 minutes before slicing. Serve topped generously with the rocket and walnut salsa.
