
Grilled Mackerel With Avocado & Tomato Salsa

Ingredients
- 2 mackerel fillets (skin on)
- 1 ripe avocado, diced
- 10 cherry tomatoes, quartered
- 1 small red onion, finely chopped
- Juice of 1 lime
- Fresh coriander, chopped
- Salt and pepper
Method
- Preheat grill. Season mackerel with salt and pepper.
- Grill skin side down for 5 minutes, then 3 minutes skin side up.
- Mix avocado, tomatoes, onion, lime juice, coriander, salt, and pepper to make the salsa.
- Serve mackerel topped with salsa.
