
Charred Artichoke, Lemon & Herb Grain Bowl
"A vibrant mix of artichokes, ancient grains and greens, this is a modern take on Mediterranean eating with some powerful digestive benefits along the way. Artichokes contain a unique prebiotic fibre that encourages the growth of beneficial bacteria, while peppery rocket promotes bile flow to support healthy digestion. Ingredients
- 2 globe artichokes (or 200g jarred artichoke hearts, drained)
- 120g cooked quinoa or farro
- 50g rocket
- 2 tbsp olive oil
- Juice of ½ lemon
- 1 tbsp chopped parsley & mint
- 1 tbsp pumpkin seeds
- Salt & pepper
Method
- If using fresh artichokes: trim and steam for 25–30 minutes, then halve.
- Heat a pan and char artichokes cut-side down in olive oil until golden.
- Toss grains with lemon juice, herbs and seasoning.
- Assemble bowl with grains, rocket, artichokes and seeds.
